Chocolate Biscuit Cake by Capt. Jay Mortenson S/V Flying Bassett

This is the recipe for the Chocolate Biscuit Cake, Jay made and brought to the club meeting Friday night.. One more reason to come to the clubs potluck dinner meetings! Thanks Jay.

 

 

Ingredients :

8 oz. good-quality dark chocolate, chopped

1 stick unsalted butter

2 large eggs

1/2 cup sugar

8 oz tea biscuits or graham crackers, broken into almond sized pieces

zest of one orange

1/2 cup chopped hazelnuts, walnuts, or almonds

1/4 cup raisins, soaked in 2 tablespoons of rum or sherry

Directions

1. Melt chocolate in a double boiler. in another saucepan melt butter.

2. In a large mixing bowl, stir together the eggs and sugar until mixed well. Add melted chocolate and butter. Add orange zest, raisins, and nuts to the chocolate mix. Gradually fold in crushed biscuits until they are evenly distributed throughout the chocolate.

3. In a 2 pound loaf pan lined with plastic wrap spread the mixture and smooth out evenly. Cover entire pan with plastic.

4. Refrigerate overnight. cut into slices.
